Kolkata Kati Roll (KKR) with Green Apple Cilantro Chutney

Each of its states in our country boasts of its own tasty food specialty. In Kolkata - the land of Dada and also considered one of the country’s culinary hubs - it’s the kati roll. Though the roll originally consisted of ingredients cooked on a skewer (or “kati”) and wrapped up in a traditional, soft flatbread (“roti”), it now encompasses many flavourful fillings cooked in any number of ways. Our recipe has sautéed vegetables and paneer. We are also making the boring green chutney sit on the bench for this one and introducing a newcomer to join the squad - green apple cilantro chutney. The apples in this chutney just give you the perfect amount of sweet combined with tartness that will layer well on the kati rolls.
